Christmas Pickles
Yesterday my Sister & our friend Mary Pat came over and we made these Christmas pickles. We used red, green and white veggies including pearl onion, green beans, red and green jalapeños, red bell peppers, cauliflower, and celery.
Making pickles is really fun, especially if you get to hang out with your awesome, funny friends!
First you sterilize the jars, then blanch the veggies and shock them in ice water. Pack the jars, add the brine & spices, remove any air bubbles with a chopstick, seal the jars with sterilized lids and bands, and finally process them in the covered, boiling water canning pot for 15 to 30 minutes, depending on the size of the jars. The last step is to carefully remove the hot jars from the pot with the jar lifter thingy.
